Banana pancakes

I’m a sucker for cake and if I can have it for breakfast it’s a bonus! While I’m trying to limit my cake intake I think that pancakes are the perfect breakfast or brunch treat to have once in a while. This banana pancake recipe is yummy and not too naughty, only a little.

INGREDIENTS

2 ripe bananas

1 cup (aprox 250ml) buttermilk

1 egg

1 tablespoon of sugar or agave nectar

A dash of vanilla extract

1 cup (aprox 65g) of self raising flour

Half a teaspoon of cinnamon

 

METHOD

Mash up the ripe bananas

Add to the mashed bananas, a beaten egg, vanilla, buttermilk, sugar (or agave) mix well

Slowly mix in the flour and cinnamon, keeping the batter light and fluffy

If you have time, leave the batter to sit for 30 mins

Heat a pan and make the pancakes whatever size you like, I love making tiny ones as they’re so cute and they make me feel less guilty about cake for breakfast.

Bananas are full of potassium which helps protect your cardiovascular system. Buttermilk sounds very fatty but in fact it’s really low in fat and contains no butter, this is a cultured milk and generally contains only 1-2% fat. Adding cinnamon not only makes the pancakes taste extra special but cinnamon is great for the heart, blood sugar and the brain.
